Spiced Apple Pie

This apple pie recipe is a staple in homestead baking, loved for its flaky crust and sweet, spiced apple filling. Follow these simple steps to create a homemade pie that will impress your friends and family.

Ingredients:

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon salt

  • 1 tablespoon granulated sugar

  • 1 cup unsalted butter, cold and cut into small pieces

  • 1/2 cup ice water

  • 6-7 cups of peeled, cored, and thinly sliced apples (a mix of sweet and tart varieties)

  • 3/4 cup granulated sugar

  • 2 tablespoons all-purpose flour

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon salt

  • 1 tablespoon lemon juice

  • 2 tablespoons unsalted butter, cut into small pieces

Instructions:

  1. You can use a store bought crust, or make your own.

    To make the crust: In a large bowl, combine the flour, salt, and sugar. Add the cold butter pieces and use a pastry blender or your fingers to work the butter into the flour mixture until it resembles coarse crumbs. Add the ice water, a little at a time, and mix until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and chill for at least 1 hour.

  2. Preheat your oven to 375°F (190°C).

  3. Make the filling: In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Mix until the apples are evenly coated.

  4. Roll out one disk of dough on a floured surface to fit a 9-inch pie dish. Place the dough in the dish and trim any excess. Pour the apple mixture into the crust and dot with the pieces of butter.

  5. Roll out the second disk of dough and place it over the apples. Trim any excess dough and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.

  6. Optional: Brush the top crust with a beaten egg and sprinkle with coarse sugar.

  7. Bake the pie for about 50-60 minutes, or until the crust is golden brown and the filling is bubbly. Allow the pie to cool before slicing and serving.
